Marinated Shrimp And Onions 
2 pounds shrimp, boiled and peeled 3-4 onions, sliced
1/4 cup oil 1/3 cup defatted chicken broth, less salt, or reserved shrimp broth
1/4 cup vinegar 1/2 cup catsup
1 teaspoon sugar 1/2 teaspoon pepper
2 bay leaves 
Alternative layers of shrimp and onions in a bowl or dish. Pour marinade over top and cover and refrigerate for a minimum of 24 hours. Remove bay leaves and drain. Is good served with melba rounds.
Yield = 8 Servings
